Portuguese Mood Beef

portuguese-mood-beefA great meal for a cold night.  It requires minimum preparation and the long simmering lets the aroma warm your house!



  • 1/4 Cup olive Oil
  • 1 1/4 teaspoons salt
  • 5 cloves garlic, minced
  • 6 tablespoons tomato paste
  • 1 1/2 cups water
  • 1/2 teaspoon crushed red pepper
  • 1 cup ditalini pasta
  • 1 1/2 lbs All Natural Homestead Beef Round steak, cut into strips ( Can also use our Flank Steak)
  • 1/4 teaspoon Ground Black Pepper
  • 1 Large yellow onion, thinly sliced
  • 2 Green peppers, cut into thin strips
  • 1 Bay Leaf
  • 1 (35 oz) can italian plum tomatoes, hand crushed and juice included
  • 2 tablespoons minced parsley leaves

In a heavy skillet, heat the olive oil over high heat.  Season the beef with 1/2 teaspoon of the salt and black pepper.  Saute the beef until well browned on all sides, about 4 minutes.  You may do this in batches to keep the skillet uncrowded.  Transfer the beef to a warm plate and set aside.

Add the onion and peppers to the skillet and cook, stirring frequently, until softened and caramelized around the edges, about 6 minutes.  Add the garlic and cook for 1 minute.  Add the tomato paste and cook for two minutes, stirring constantly.  Add the tomatoes, water,  bay leaf, crushed red pepper and remaining 3/4 of teaspoon salt.    Return the beef to the pan and bring the sauce to a boil.  Reduce the heat to medium- low and cook covered, for 1.5 hours or until the meat is very tender.  Add the pasta to the sauce and cook until tender, about 25 minutes.  Garnish with parsley and serve immediately.
